Saponification

Saponification is the opposite reaction to esterification, consisting of the hydrolysis of esters.

Acid hydrolysis yields carboxylic acids and alcohols (diols, triols). Basic hydrolysis is used to manufacture soap (by the action of caustic soda on a fat, a glycerine ester).
