Rosemary, or Rosmarinus officinalis, is a Mediterranean plant that is best harvested before it blooms, beginning in January.
Nutritional value of rosemary
Used as an herb, rosemary adds a delicate flavour to dishes. It is bursting with flavonoids and soothes tension (muscular or nervous). It is also recommended as a remedy for tiredness and temporary depression. Rosemary stimulates biliary secretions and facilitates excretion. It is used to make essential oils, that can be used for massages or in the bath.
Choosing a bunch of rosemary
Purchase rosemary in fresh or dried bunches. Prefer it fresh and freshly picked, preferably before the plant blooms, because this is when the plant reaches its full flavour.
