Gluten

Gluten is a composite of plant proteins found in the endosperm of most types of grains. Alongside starch, it constitutes the energy reserve for the seed.

There are two types of gluten: prolamin and glutenin.

Gluten intolerance only concerns prolamin, contained, for example, in wheat, barley and rye.
