Nutritional value of courgette
Courgettes have a very low calorie count (15 kilocalories per 100 grammes). An excellent source of gentle fibre effective on transit, the courgette is well tolerated by delicate digestive systems.
From the traditional Black Beauty courgette (elongated and green) to the One Ball courgette (round and yellow) and the Parador (elongated and yellow), there are many different varieties of courgette to try.
Select smooth, heavy and firm courgettes with a regular colour (green or yellow). The stem must be freshly cut, white and not wrinkled. Look for thin courgettes that are more tender and crunchy.
